Meal prep egg bites (Starbucks copycat)

These Starbucks copycat egg bites are easy to meal prep and are a great snack or breakfast on the go! You can bake them in the oven or cook them in the air fryer. The cottage cheese adds extra protein and more density to the bites. You can freeze them, they are a great addition to your postpartum meal prep.





Egg bite batter

- 8 eggs

- 1 cup cottage cheese

- 1/2 tsp sea salt

- 1/2 tsp black pepper

- 1 tsp garlic powder

- 1/4 chili flakes


Topping ideas:

- cooked spinach, sun dried tomatoes, feta

- broccoli, red onion, bacon, Gruyère cheese

- pesto, tomato

- green onion, bell pepper

- jalapeño, cream cheese


Method

Blend and pour into silicone baking cups. Add toppings (but don’t overpack them or they’ll fall apart).


Bake in oven at 350F for 20 minutes. If the top is not fully cooked return to the oven cooking in 3-minute increments.

OR

Air fry at 350F for 8-10 mins (I checked around 7 mins to make sure they weren’t too brown).


Pop them out and enjoy!
