Chia pudding (so easy!)

This is my non-negotiable meal prep snack I make a few times a week šŸ™ŒšŸ½


So simple, takes less than 5 minutes, and a very flexible base recipe.


This can be $9 at Village Juicery with granola and jamā€¦..even though is SO easy to make at home.


Makes about 3-4 servings.



Ingredients

  • 1x400mL can of coconut milk (or about 2 cups of any other dairy or non dairy milk for more of a calcium boost to your day)

  • 5 tablespoons chia seeds

  • 1/2 tbsp vanilla extract

  • 1 tbsp maple syrup

  • dash of cinnamon (optional)


Method

Mix all ingredients together and refrigerate. Blend if you donā€™t like the texture before refrigerating. Should be ready in 4-6 hours but best after overnight.


Other flavor ideas

  • Chocolate coconut - add coconut flakes and chocolate shavings/cocoa powder

  • Pina colada - add coconut milk as the base and omit cinnamon, top with pineapple and coconut flakes

  • PB and J - add 1tbsp all natural peanut butter and 1 tbsp of chia jam

  • Berry - add lemon zest and top with berries for even more a fiber packed punch

  • Citrus - omit cinnamon and add 1/2 tsp lemon zest
