
This is my non-negotiable meal prep snack I make a few times a week šš½
So simple, takes less than 5 minutes, and a very flexible base recipe.
This can be $9 at Village Juicery with granola and jamā¦..even though is SO easy to make at home.
Makes about 3-4 servings.
Ingredients
1x400mL can of coconut milk (or about 2 cups of any other dairy or non dairy milk for more of a calcium boost to your day)
5 tablespoons chia seeds
1/2 tbsp vanilla extract
1 tbsp maple syrup
dash of cinnamon (optional)
Method
Mix all ingredients together and refrigerate. Blend if you donāt like the texture before refrigerating. Should be ready in 4-6 hours but best after overnight.
Other flavor ideas
Chocolate coconut - add coconut flakes and chocolate shavings/cocoa powder
Pina colada - add coconut milk as the base and omit cinnamon, top with pineapple and coconut flakes
PB and J - add 1tbsp all natural peanut butter and 1 tbsp of chia jam
Berry - add lemon zest and top with berries for even more a fiber packed punch
Citrus - omit cinnamon and add 1/2 tsp lemon zest
